• 3 eggs

  • 3/4 teaspoon salt

  • 1 cup milk

  • 1/2 cup Alison Holst baking mix (see below for a recipe)

  • 2 cooked new potatoes

  • 1 cup cooked spinach

  • 1 cup grated cheese

  • 1 large onion

  • 2 garlic cloves

  • 1 tablespoon butter

Alison Holst baking mix:

I found this on a random forum - I cannot promise it is exactly right but it seems convincing enough for me! It’s a bulk mix so adjust measurements as appropriate for you. Method has instructions for how to mix.

  • 10 cups flour

  • 18 teaspoons baking powder

  • 250 grams butter (or 125 grams butter, 125 grams kremelta)

  • 2 teaspoons salt

  • 2 cups milk powder

Method

Beat the eggs, salt, milk and baking mix just enough to combine ingredients (do not overmix).

Add chopped potatoes, spinach, and grated cheese.

Cook the onion and garlic in the butter (finely diced / minced, I would think) and add. Stir.

Pouir into a well buttered, solid bottomed flan tin.

Bake at 200°C for 25-30 minutes. Leave to stand for 10 minutes before serving.

For the baking mix:

Sift dry ingredients and rub in butter/kremelta. Alternatively you can whizz the whole lot in a food processor. Keep in the fridge.
