Arabian Nut Cake
1 cup chopped dates
3/4 cup coffee (or 1 teaspoon coffee essence and 3/4 cup boiling water)
113 grams butter
1 cup sugar
2 eggs
1 and 3/4 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 and 1/2 teaspoon baking powder
1/2 cup chopped nuts
1 teaspoon vanilla
Method
Pour hot coffee over dates and let cool.
Separately, cream butter and sugar, add eggs and mix.
Sift flour, baking soda, salt, and baking powder together and add to creamed mix alternately with coffee and dates, continually mixing.
Add vanilla and nuts and stir.
Bake in a greased, lined shallow cake tin for 1 hour in a medium oven (I’m not sure what it means by medium, but I’d go for my usual recommendation - 180°C)
Ice. I think a coffee flavoured buttercream might be nice here.
