• 1 cup sugar

  • 113 grams butter

  • 1 egg

  • 1 cup flour

  • 1 cup cornflakes

  • 1 cup desiccated coconut

  • 1 cup salted peanuts OR 1 tablespoon peanut butter

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

Cream together butter and sugar. Add egg and mix. Add remaining ingredients and mix.

Roll into small balls and flatten on oven trays (lined with baking paper).

Bake for about 12-15 minutes in a moderate oven - why not try 175-180°C?

Makes about 30-36 biscuits.
