• 1 cup coarsely grated carrots

  • 170 grams raisins or sultans

  • 3/4 cup water

  • 30 grams butter

  • 3/4 cup sugar

  • 1 teaspoon cinnamon

  • 1/2 teaspon ground nutmeg

  • 3/4 cup self raising flour

  • 3/4 cup plain flour

  • 1/4 teaspoon salt

  • 1/2 teaspoon baking soda

  • 1/2 cup chopped walnuts

Heat carrot, raisins/sultanas, water, butter, sugar, cinnamon and nutmeg together in a saucepan and simmer for 10 minutes. Leave to cool.

When cool, stir in remaining ingredients.

Bake in a (greased, lined) loaf tin for about 1 hour at 175°C.
