Cheese Muffins - Actually Scones (from Janet)


“Muffin” is a bit of a misnomer by Nan/Janet, this is a scone recipe!

Mix flour, baking powder, salt and pepper in a bowl.

Grate in cheese. No amount indicated - listen to your heart. Add egg and mix all together with a knife.

Add milk and make scone dough. Be gradual with your milk, you don’t want it to be too dry or too soggy. Go for a soft, sticky, messy looking dough and don’t overwork it or you’ll form too much gluten and they’ll get tough.

Pat out the dough to about 2-2.5cm tall and cut it into chunks roughly the same size.

Put pieces on an oven tray. Bake in a hot oven.

Try for 210°C for about 10-15 mins and see how you go. You want a golden, crispy crust.

Method
