Cinnamon Oysters (from Eleanor)

Clearly a favourite recipe of Nan’s, she rates it “delicious”.

  • 4 eggs

  • 1 cup flour

  • 3/4 cup sugar

  • 2 dessert spoons syrup (my guess here would be golden syrup)

  • 2 teaspoons cinnamon

  • 1 teaspoon ginger

  • 1 teaspoon baking powder


Method

Beat eggs. Add sugar and beat. Add syrup and beat.

Fold in dry ingredients.

Place spoonfuls in pattypans.

Bake for 12 minutes at 205°C.

When fully cooled, split and fill with whipped cream.
