Clara Stancombe’s Fruit Loaf (2007)

  • 225 grams dried fruit

  • 1 cup hot tea

  • 1/2 cup sugar

  • 1 good cup flour (I assume this means a heaped/large cup, rather than the opposite of a bad cup)

  • 2 teaspoons baking powder

  • 2 tablespoons marmalade

  • 1 egg

  • 1/2 cup walnuts (if liked)


Soak fruit overnight in a cup of hot tea.

Add remaining ingredients and mix.

Place in a greased, lined loaf tin.

Bake at 175°C (or less) for one hour.
