Clara Stancombe’s Fruit Loaf (2007)
225 grams dried fruit
1 cup hot tea
1/2 cup sugar
1 good cup flour (I assume this means a heaped/large cup, rather than the opposite of a bad cup)
2 teaspoons baking powder
2 tablespoons marmalade
1 egg
1/2 cup walnuts (if liked)
Soak fruit overnight in a cup of hot tea.
Add remaining ingredients and mix.
Place in a greased, lined loaf tin.
Bake at 175°C (or less) for one hour.
