• 56 grams butter

  • 1/2 cup sugar

  • 1 egg

  • “good” tablespoon golden syrup

  • 1/2 teaspoon baking soda

  • 1/2 cup milk

  • 1 cup flour

  • 1 teaspoon baking powder

  • 1 tablespoon coffee essence (or cocoa to make this a chocolate cake)

Method

Cream butter and sugar. Beat one egg and add along with golden syrup to creamed butter and sugar.

Dissolve baking soda in milk and add gradually with flour and baking powder (continue mixing) to the wet mix.

Lastly mix in coffee essence or cocoa.

It’s your own guess as to baking temperature or time, Janet loves to keep us on our toes. Perhaps 180°C in a greased lined cake tin, that’s usually the go. If I make this one, I’ll come back here and update with a recommended baking duration. Good luck!
