3 eggs
1/2 cup caster sugar
1/2 cup cornflour
1/4 cup flour*
1/2 teaspoon baking soda
1 dessert spoon golden syrup
1 dessert spoon cocoa
*Nan’s noted this recipe needs a bit more flour or cocoa, so I’ve upped this to 1/4 cup in the conversion to cups. It might need a bit of trial and error.
Elsie’s Chocolate Layer Cake
Separate egg whites and yolks. Beat whites until stiff (but not dry).
Add sugar and yolks and beat. Add golden syrup.
Fold in dry ingredients.
Put in 7” square tins with the bottom only lined and buttered.
Bake at 190°C for 20 minutes.
This recipe doesn’t specify a filling for these layers, but anything nice with a sponge would be great here. Whipped cream, buttercream, chocolate mousse, maybe some jam or fruit as well… yum.
