• 1 and 1/3 cup sugar

  • 450 grams fruit (dates, sultanas, raisins)

  • 1 teaspoon mixed spice

  • 1 teaspoon ginger

  • 1 teaspoon cinnamon

  • 2 tablespoons golden syrup

  • 2 tablespoons butter

  • 2 level teaspoons baking soda

  • 2 and 1/2 cups boiling water

  • 4 cups flour

  • 1/2 teaspoon salt

Place sugar, fruit, mixed spice, ginger, cinnamon, golden syrup, butter and baking soda in a bowl.

Pour over boiling water, mix and leave to cool.

Mix in flour and salt.

Bake in 2 greased, lined loaf tins at 160°C for 1 to 1 and 1/4 hours.
