113 grams butter
2/3 cup sugar
1 egg, beaten
1 and 1/3 to 1/2 cups plain flour (adjust based on mixture wetness, which will depend on banana size)
1 teaspoon baking soda
1/2 cup milk
1 tablespoon golden syrup
1 teaspoon ginger
1 teaspoon mixed spice
2 mashed bananas

Cream butter and sugar together. Add beaten egg, then golden syrup.
Dissolve baking soda in milk and add alternately with combined dried ingredients.
Add bananas and mix well.
Place in a greased loaf tin and bake for 1 hour at 190°C.
