• 2 cups flour

  • 1/2 teaspoon salt

  • 4 teaspoons baking powder

  • 1/2 cup caster sugar

  • 100 grams butter

  • 1 cup milk

  • 1 egg

  • 1 tablespoon cinnamon

  • 1 tablespoon sugar

  • 1 to 1 and 1/2 cups blackberries, blueberries, banana or pineapple pieces.

Muffins Fruity


Method

Sift flour, salt and baking powder. Add caster sugar and mix.

Melt butter. Add milk and eggs, and beat well.

Add wet ingredients and fruit to dry ingredients and fold carefully together. (Don’t overmix!)

Grease muffin tins and fill 3/4 full.

Combine cinnamon and sugar and sprinkle over muffins.

Bake at 220°C for 12-15 minutes.
