Not Too Sweet Muffins

  • 1 and 3/4 cups flour

  • 3/4 teaspoon salt

  • 1/4 cup caster sugar

  • 2 and 1/2 teaspoon baking powder

  • 2 teaspoons lemon rind

  • 3/4 cup blueberries (if frozen, add while still frozen)

  • 1 large egg

  • 3/4 cup milk

  • 1/3 cup oil e.g. canola


Method

Super brief method from Nan for this recipe, so here’s what I would do, based on my knowledge of baking muffins.

Combine dry ingredients and mix.

Combine wet ingredients (not berries) and beat.

Fold wet ingredients into dry - don’t overmix. Fold in the blueberries.

Spoon into greased muffin tins and bake at 225°C for 25 minutes.
