Pastry

  • 1 and 1/2 cups flour

  • 85 grams butter

  • sprinkle sugar (for sweet pastry) or salt (for savoury)

  • 1 teaspoon vinegar (I’d use white)

  • 1/3 cup milk


Method

Rub butter into sifted flour.

Mix vinegar into milk and add slowly to dry ingredients, using a knife to mix to a very stiff dough.

Add more milk as needed.

You could use this as a pie or quiche pastry in a pie dish, or even to make little handheld pies.
