Pavlova Filling (Lemon)

  • 4 egg yolks

  • 1/2 cup sugar

  • pinch of salt

  • 1 tablespoon grated lemon rind

  • 4 tablespoons lemon juice (or less)


Method

Beat egg yolks. Add remaining ingredients and cook in a double boiler until thick.

Cool. Add 1 cup of whipped cream.
