Rich Fruit Cake (special) (from Janet)

  • 225 grams brown sugar

  • 225 grams butter

  • 6 eggs

  • 1 and 1/2 cups flour

  • 1 teaspoon cinnamon

  • 225 grams almonds or walnuts

  • 1 teaspoon nutmeg

  • 1 tablespoon golden syrup

  • 450 grams currants

  • 450 grams sultanas

  • 680 grams raisins

  • 113 grams fruit peel

  • 1 teaspoon mace (yes, mace - this is a spice similar to nutmeg)

  • 1 teaspoon baking soda


Method

Janet didn’t give us much to go on in terms of method. Just bash it all together and chuck it in a greased and lined cake tin, I suppose. I never liked fruit cake so I won’t be making this one to figure it out. We don’t have a temperature for the oven either so try it at 180°C and see how you go.

Bake 4 to 4 and 1/2 hours.
