Tastes & looks like a traditional wedding cake.

  • 3/4 cup butter

  • 1 cup sugar

  • 1 and 3/4 cups flour

  • 2 teaspoons baking powder

  • 1/2 cup milk

  • 1 teaspoon almond essence

  • grated rind of 1 lemon

  • 3 egg whites

  • 1/4 teaspoon salt

American Lady Cake


Method

Beat butter and sugar until light & creamy.

Sift in flour and baking powder alternately with milk, beating between.

Add essence and lemon rind, and mix.

Separately, whip egg whites until stiff, with salt. Fold into cake batter.

Bake in greased 9” cake tin at 175°C for about 45 minutes.

Spread with white icing.
